- 2 Egg whites
- 1/2 cup Kidney beans
- 1 tbsp Chili powder
- 1 tsp Ground cumin
- 1 tbsp Low sodium soy sauce
- 1/3 cup Steel cut oats - uncooked
- 10 oz Lean ground turkey breast
- 2 tsps Dr. Sears' Zone Extra Virgin Olive Oil
- 2 tbsps Dried onion flakes
- 1/2 cup Green beans - fresh or thawed frozen
- 1 cup Red bell pepper - or yellow bell pepper (minced)
- 1 (14.5 oz) can gently mashed with a fork (don't drain)
- 7 cups Romaine lettuce
- 1 1/3 cups Shredded carrot
- 2 cups Thinly sliced celery
- 2 cups thinly sliced cucumber
- 2 cups Strawberries
- 1/4 cup Low-fat cheddar cheese - (1 oz) or Monterey Jack cheese (grated)
- 1 cup Avocado
- 1/3 cup fresh-squeezed lime juice
- 1 clove Garlic - minced
- 1 tsp Hot sauce
- Black pepper - to taste

Instructions
- Preheat oven to 350°F.
- Mist a 9x5 loaf pan with olive oil cooking spray.
- Combine eggs, beans, spices, and soy sauce in food processor or blender. Cover and blend until smooth.
- Pour into 2-quart mixing bowl.
- Add oats, meat, olive oil, onion flakes, green beans, bell pepper, and half the diced tomatoes.
- Mix with clean, bare hands and press into pan.
- Top with remaining mashed, diced tomatoes.
- Bake uncovered for 1 hour until meatloaf is firm to the touch and pulls away from sides of pan.
- Mix salad ingredients in a large mixing bowl.
- Arrange on 4 serving plates.
- Mash avocado, lime juice and hot sauce with pepper until smooth.
- Spoon over salads.
- Cut loaf into 8 slices.
- Divide between serving plates and serve immediately.
