Ingredients
- 5 oz Ground chicken breast
- 1/4 cup Salsa
- 2 tsp Dr. Sears' Zone Extra Virgin Olive Oil
- 1/2 cup Onion - chopped
- 1 clove Garlic - pressed
- 1/2 tsp Chili powder
- 1 Bay leaf
- 1/3 cup Black beans canned - rinsed/drained
- 1 cup Water
- Salt and pepper - to taste
- 5 cups Lettuce - torn
- 2 tbsps part skim milk
- 2 cups Cucumber
- 2 Green onions - chopped
- 14 Black olives
- 1/2 cup Salsa
- 1 Apple - shared

Instructions
- Brown the chicken in 1/4 cup of salsa in a skillet. Set aside to cool.
- Wipe pan with a paper towel and add olive oil in skillet.
- Heat to medium to sauté the onion for a couple of minutes before adding the garlic and then add the chili powder, bay leaf and black beans.
- Stir for a minute or so and then add a cup of water, salt and pepper. Let the beans heat through.
- Remove the bay leaf.
- In two bowls, layer the lettuce, chicken/bean mix, mozzarella cheese, cucumber, green onions, black olives and salsa.
