  • 3 oz Canadian Bacon - minced (or leftover meat)
  • 1 cup Zucchini - diced small or grated
  • 1 cup Tomato - diced small
  • 1 cup Onion - diced small or grated
  • 1/2 cup Green Pepper - diced small or grated
  • 1 cup Mushrooms - diced small or grated
  • 1 1/2 tsps Dr. Sears' Zone Extra Virgin Olive Oil
  • 2 tbsps Tomato Juice - low sodium
  • Salt and Pepper - to taste
  • 1 tsp Worcestershire Sauce - to taste
  • 1/4 cup Egg Beaters- whites

Instructions

  1. Cut the Canadian bacon and all the veggies into small pieces, set aside.
  2. Sauté the veggies in olive oil, tomato juice and Worcestershire sauce until tender or to your liking. (Add more tomato juice or water if needed.)
  3. Add cooked meat and Egg Beaters.
  4. Cook until egg is done.
