  • 3 tbsps Fresh-squeezed lemon juice
  • 1 tbsp Low-sodium soy sauce
  • 1 tbsp Dijon mustard
  • 2 cloves Garlic - minced
  • 1 tbsp Agave nectar
  • 2 tsps Curry paste
  • 1 lb Medium shrimp - (about 48) peeled and deveined

Instructions

  1. In a shallow dish or resealable bag, mix together the lemon juice, soy sauce, mustard, garlic, agave nectar and curry paste.
  2. Add shrimp and seal or cover.
  3. Marinate in the refrigerator for 1 hour.
  4. Preheat a grill for high heat. When the grill is hot, lightly oil the grate.
  5. Thread the shrimp onto skewers or place in a grill basket for easy handling.
  6. Transfer the marinade to a saucepan and boil for a few minutes.
  7. Grill shrimp for 3 minutes per side or until opaque.
  8. Baste occasionally with the marinade.
