Curried Spinach with Tofu

The spinach and tofu are quite appetizing with the spice and flavor from the curry. Recipe includes strawberry parfait for dessert.

Ingredients

  • 10 cups Fresh spinach - or 2-10 oz . packages frozen spinach
  • 1 tbsp Dr. Sears' Zone Extra Virgin Olive Oil
  • 1/2 tsp Cumin
  • 2 tbsps Soy sauce - or tamari
  • 2 tbsps Minced hot chilies
  • 1 tbsp Minced ginger
  • 10 oz Lite firm tofu - Mori-Nu
  • Salt and pepper - to taste
  • 3 oz Fat-free cream cheese
  • 1/4 cup Fresh cilantro - (chopped)
  • 1 tsp Curry powder
  • 3 1/2 cups Strawberries
  • 1/2 cup 0%-Fat Greek yogurt
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg

Instructions

  1. If using fresh spinach, wash thoroughly and tear the leaves into bite-sized pieces.
  2. Wilt in a pot in the liquid remaining on the leaves.
  3. If using frozen spinach, thaw and remove any excess liquid.
  4. In a skillet, heat the oil, cumin, soy sauce, chilies, ginger, and the tofu with salt and pepper to taste.
  5. Sauté over high heat; then add the cream cheese, cilantro, curry powder, and spinach.
  6. Serve with the strawberry parfait for dessert.
